Ingredients:

Salad

8 cups fresh spinach leaves

8 oz. cooked shrimp

2 cups (about 2 medium) chopped mango

1 cup (about 1 small) cubed avocado

 

Dressing

1/3 cup seasoned rice vinegar

2 tbsp. lime juice

1 packet no-calorie sweetener (like Truvia)

1/8 tsp. cayenne pepper

Directions:

In a large bowl, combine all salad ingredients.

In a small bowl, mix dressing ingredients. Pour over salad and toss to coat, or serve dressing on the side.
